Chocolate Style Valentine Cake

Position oven rack in center of oven. Preheat oven to 350°F. Trace pan on parchment paper; cut out. Grease pan; line bottom of pan with parchment heart; grease paper.

For cake, combine chocolate and water in medium stainless steel bowl; place bowl over simmering water in medium saucepan. Heat, stirring frequently, until chocolate is completely melted and mixture is smooth. Set aside; cool to room temperature.

In mixer bowl, whisk together eggs, sugar and salt. Set bowl over simmering water in medium saucepan (making sure bowl doesn’t touch water); heat, whisking constantly, until eggs are warm, 1-2 minutes. Place bowl on mixer stand; beat with whisk attachment on high speed until mixture triples in volume, about 3 minutes.

In clean mixer bowl, with clean whisk attachment, beat heavy cream until firm peaks form. Gently fold cooled chocolate into egg mixture; fold chocolate egg mixture into whipped cream. Turn into prepared pan.

Place pan in water bath and bake 45-53 minutes or until toothpick inserted into center comes out clean. Place pan on cooling rack; let cake cool 25 minutes. Run sharp knife around edge of pan to loosen; carefully invert cake onto wire rack. Cool to room temperature. Refrigerate at least 2 hours.

To make glaze, bring cream to a boil. Remove from heat and add chocolate; stir until chocolate is completely melted and glaze is smooth. Stir in vanilla. Cover surface with plastic wrap; cool about 10 minutes. Place chilled cake on cake circle; set on cooling rack. Spread raspberry jam evenly over top and sides of cake. Pour warm chocolate glaze on top of cake; using clean spatula, spread evenly over top and side, covering completely. Refrigerate cake at least 30 minutes.

Place white chocolate in small stainless steel bowl; place bowl over simmering water in saucepan. Heat, stirring frequently, until chocolate is completely melted. Remove from heat. Color chocolate with icing color to desired pink tone. Place colored chocolate in parchment bag; snip tiny hole in bottom. Remove cake from refrigerator; drizzle with pink chocolate. Refrigerate cake at least 20 minutes to set chocolate. Let cake stand at room temperature 30 minutes before serving.

Can be stored in refrigerator, loosely covered, up to 5 days.

What interesting things are packaged in Valentine gift baskets?

If you are like me, the day after New Year’s Eve is when you start thinking about what to get your sweetie for Valentine’s Day. This year I think I might get her two nice big Valentine gift baskets.

Like many other folks, I have been aware of the gift basket phenomenon, but I have not had a reason to take a closer look at the baskets and the absolute limitless variety of items that are packaged in one of these baskets. I recently spent some time browsing the internet and eBay and I was positively amazed.

You can order a basket stuffed with massage oils and other massage items, but did you know that you can get baskets with bath soap, lip balm, body lotion, aromatherapy things, and other stuff from Bath & Body? One basket came packaged with pink grapefruit body lotion. There are gift baskets with nothing but Avon products. I guess women like smelly soaps and things like this. I don’t know about you, but if someone gave me a gift basket with soap in it, well, I wouldn’t exactly know what to think about that. Do I smell?

You can buy your lover a Victoria’s Secret gift basket. It includes a $20 gift card she can use to purchase the panties that actually fit her, rather than the lacy pair included in the basket.

Since we are talking about naughty stuff, I found one gift basket that includes a “Naughty Journal”, whatever that is. Other baskets come packaged with nothing but romance novels.

Wine, tea, coffee, and champagne are popular gift basket items. For only $129 you can buy a basket containing a bottle of Dom Perignon. (Sorry, the Cristal gift basket is sold out.) What about beer, you ask? I did not find one single gift basket that contained any kind of beer–what a shame.

Food. How would you like a Valentines gift stuffed with cheese and crackers? (Hopefully not the smelly cheese.) You can get a gift basket with ice cream in it. One basket comes with a candy jar in the shape of a cupcake. Maybe the candy jar is to hold the chocolate.

Chocolate is so common, my informal survey found that 90% of the baskets come with at least one piece of chocolate. There are chocolate kisses, chocolate bars, hot chocolate, chocolate roses, dark chocolate, milk chocolate, and every other type of chocolate thing imaginable. Even the basket stuffed with smelly bath soap had space for a few chocolate kisses. I think chocolate is the second most popular Valentine’s gift–roses are most popular.

There are baskets filled with many different types of roses. How many different rose “things” can you fit in a basket? There are real roses, of course, but there are also feather roses, roses made of bath soap, glass roses, gold plated roses, chocolate roses, candy suckers in the shape of roses, plastic roses, roses made of paper, and on and on and on…

By now, dear reader, I think you get my point. It is possible to get literally anything you want in a gift basket for your Valentine. Like I said earlier, I will be buying my sweetie two nice gift baskets on eBay–one of them with a stuffed teddy bear and a feather rose and heart made of chocolate. The other basket will be the one with the smelly bath soaps. I’m sure I’ll find the perfect basket, there are bound to be hundreds listed with delivery in time for Valentine’s Day. Is there a time for love, romance and relations?

The answer should be a resounding yes. To celebrate emotions, love and romance, people use a lot of symbols: flowers, gems, candy, food, drinks, dance, a romantic dinner, e Cards, jewellery and … chocolate!

The 14th of February is the day for friends and lovers to express their feelings and share a glorious custom by gifts of flowers, gems, romantic letters and more.

Since ancient times people is looking for a time to share glorious moments with those special beings and loved ones.

The Valentine e Cards are the inheritance from a man who was executed the 14th of February of the year 269. He left a note for the daughter of his jailer, to thank her for being so special to him. He signed what we would call an e Card with the signature: “From your Valentine”.

Pagan Romans celebrated the feast of Lupercadia which was one of the orgy-centric all day bashes enjoyed by Romans.

During Lupercadia, which was held on February 14, women would write love letters and leave them in a large urn. Each Roman man would draw a note and go after who wrote the message they chose.

Lupercadia which was a fertility festival dedicated to Jaunus the Roman God and Godess of agriculture.

With the advent of Christianity, Lupercadia was banned and Valentine´s day was offered as substitute. Pope Getasius declared February 14 Saints Valentine´s day around 498 AD.

France and England people used to believe February 14 was the beginning of birds mating season, which reinforced the idea that the middle of February, Valentine´s day should be a day for romance.

Besides the United States, Valentine´s day is celebrated in Canada, Mexico, the United Kingdom, France and Australia. For a reason unknown to me, Valentine´s day is celebrated in Venezuela in September.

Since ancient times, love, friendship and romance are the privilege of everybody. So, Valentine´s is the opportunity for us to show appreciation for those we love, for our friends and for those special beings close to our hearts on a creative and positive relationship.

A great way to show our feelings is by gifts of flowers. A bouquet of cut flowers is awesome as it is able to transform a normal environment into a beautiful garden.

Gifts are traditional as a way to show affection, love, romance and friendship. Valentine´s day is marvellous to look for and then enjoy a little corner of paradise for a sexy weekend getaway. It is marvellous to enjoy a sense of privacy in sensual surroundings to inspire romance, seduce yourself and somebody special in a sleek sexy hideaway for lovers.

Love and courtship have evolved with time. There was a time when scarcity of nubile women caused marriages to originate in captures, after men raided neighboring villages for wives.

Then, the word honeymoon was born. There was a French custom originated in the fact that newly married couples went into hidden to avoid the kidnapped grooms to be rescued. After the moon went through all its phases, the couple drank a brew called metheglin which was made of honey.

At that time arranged marriages were the norm. They were business relations born out of the desire and or need for property, monetary or political alliances.

During medieval times, love emerged as a relevant cause for a relationship, in reaction to arranged marriages. The Victorian era, after 1830, brought romantic love to become the primary requirement for marriage.

Love, romance and friendship are great reasons to share, dine and gift.

Poems, cards, candy, food, drinks jewellery and romantic places are great ways to show loved ones how important they are for us.

Valentine day is the time to express love and celebrate the spirit of love.

All About Valentine Day Wine And Food Ideas

Once again Valentines Day is here and even though it may not be official holiday it is a very important day for that special women in our life.  So while we have some time lets plan ahead for the big even and make it a great day for that special someone.

When pairing wines with chocolate, your best bet is to match lighter, more elegant flavored chocolates with lighter bodied wines and likewise, the stronger the chocolate, the more full-bodied the wine should be. A good example is a bittersweet chocolate tends to pair well with an intense California Zinfandel now a more subtle white chocolate ends to be mellower flavor, making it an ideal candidate for a Sherry. Be My Valentine Chocolate Cake

This is the recipe for the cake my mother made every Valentines Day. She would bake the cake in 2 pans. One round, and one square. She then would turn the square cake to form a diamond, cut the round cake in half and attached each half to either side of the point of the diamond with frosting. She would then decorate with candies and write with red frosting “Be My Valentine”,. That is how the name came about. Try this recipe for a wonderful Valentine Day dessert.

Be My Valentine Chocolate Cake


1/2 cup butter


4 squares (1 oz each) unsweetened chocolate


2 eggs


1 3/4 cups of buttermilk


2 teaspoons of vanilla


2 1/2 cups sifted self rising flour


2 cups sugar


Dark Chocolate Frosting following


Preheat oven to 350 degrees, grease and flour 1 square cake pan, 1 round cake pan,(to make heart)or two 8 inch round pans for a layer cake. Combine butter and chocolate in small saucepan. Melat over low heat; remove pan from heat set mixture aside to cool. Beat eggs in mixing bowl with electric mixer; beat until well blended. Stir in chocolate mixture. Pour batter into prepard pans. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes; remove cake from pan & cool completely on wire racks . Frost with Chocolate Frosting. Makes 12-15 servings.

Dark Chocolate Frosting


1/2 cup butter


4 squares(1 ounce each)unsweetened chocolate


4 cups of confectioners’sugar(about 1 lb)


1/2 cup evaporated milk


1/4 teaspoon salt


2 teaspoons vanilla


Combine butter and chocolate in medium saucepan. Melt over low heat; remove pan from heat. Gradually blend in sugar, milk, salt and banilla. Beat until smooth.
